Healthy Buckwheat Banana Bread


Ingredients:

  • 2/3 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 3 large bananas
  • 2 tsp baking powder
  • 1/2 cup Stanton Milling Co. Pure Buckwheat Flour
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 cup wheat germ
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 cup apple sauce
  • 1/2 tsp salt

 

Directions:

  1. Mix together dry ingredients
  2. Add wet ingredients, then stir in mashed bananas
  3. Place batter in a greased loaf pan(s)
  4. Bake loaf in a pre-heated oven at 350 degrees for approximately one hour, or until done (significantly less time may be needed for multiple smaller loaves)

Old-Fashioned Yeast-Raised Buckwheat Cakes


Ingredients:

  • 1/2 cup cake yeast
  • 2 cups scalded and cooled milk
  • 1 cup Stanton Milling Co. Pure Buckwheat Flour
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 2 tbsp molasses
  • 1/4 tsp baking soda
  • 2 tbsp warm water
  • 2 tbsp melted shortening

 

Directions:

  1. Soften yeast in milk
  2. Add Buckwheat and all-purpose flour and salt
  3. Cover and let stand overnight
  4. In the morning, combine molasses, soda, warm water, and shortening
  5. Let stand 15 minutes
  6. Bake on a hot griddle, add a bit of water if batter seems too stiff

“Mama’s Special” Cornbread


Ingredients:

  • 1 cup Stanton Milling Co. Pure Corn Meal
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 eggs
  • 1/2 cup sour cream
  • 1/4 cup milk or buttermilk
  • 1 tbsp vegetable oil
  • 1/4 stick butter
  • 1 can creamed corn, small
  • 1/3 cup sugar

 

Directions:

  1. Melt 1/2 stick butter in large corningware dish in 350 degree oven
  2. Mix all other ingredients together, dry ingredients first
  3. Beat eggs before adding
  4. Pour batter into melted butter
  5. Bake for 40 minutes at 350 degrees
  6. Slice and serve with your favorite meal

Corn Meal Mush


Ingredients:

  • 3/4 cup Stanton Milling Co. Pure Corn Meal
  • 1 tsp salt
  • 3 1/2 cups boiling water

 

Directions:

  1. Sprinkle salt into boiling water and slowly sprinkle corn meal in, stirring continuously until corn meal is fully absorbed and the mixture boils
  2. Reduce heat and continue stirring and cooking until mixture thickens (about 20 minutes)
  3. Pour into loaf pans, chill until solid, slice and fry
